For some reason I cannot fathom, I cannot find smoked chicken in American supermarkets. There is smoked turkey in abundance — but where is the CHICKEN?!!

I believe this oversight is due to an American aversion to the (cancer causing?) residue of cooking on charcoal. Everywhere else I have lived in the world, smoked chicken — and smoked fish — is standard.

Soooo,… what is my solution?

After much research, I finally discovered a recipe for smoking chicken in the oven rather than in a smoker or on a grill. I tried it and it WORKS. It is not my recommended solution for achieving the intense, smoky flavor of my favorite bird — but what else can I do?

Here is the recipe for smoking the chicken:

Chicken - SmokedINGREDIENTS

1x chicken (roaster, unskinned, halved lengthwise)
¼ cup liquid smoke
1 cup water

MARINADE

¼ cup oil (vegetable)
2 tsp coriander
1 tsp cumin
1 tsp cloves
1 tsp cardamom
1 tsp cinnamon
1 tsp pepper (cayenne)
1/2 tsp  salt

DIRECTIONS

MIX marinade ingredients in a bowl
RUB chicken with marinade
MARINATE chicken in a covered container for a couple of hours
PUT chicken in a roasting rack
MIX water with liquid smoke
POUR bottom of rack with the water mix
BAKE in oven at 220 degrees for about 3 hours (until chicken is fully done)
FINISH with a few minutes on high broil
REMOVE chicken skin and SERVE hot or chilled

And here is my recipe for transforming a smoked bird into a salad that always gets rave reviews.

SMOKED CURRIED CHICKEN & ALMOND SALAD

Salad - Curry Chicken w/almonds

INGREDIENTS

1 whole smoked chicken (skinned, deboned & cubed)
1 cup celery (chopped, with leaves)
1 cup almonds (whole, unblanched)

DRESSING

1 cup mayonnaise
2 tbs curry powder
1 tsp salt
1 tsp pepper (cayenne)

DIRECTIONS

MIX chicken, celery & almonds in a bowl
MIX dressing in separate bowl
ADD dressing to chicken mixture
MIX well
SERVE on lettuce bed
GARNISH with paprika or parsley
