Leeky SuperStorm Soup

There is a super storm heading my way. Expecting 2+ feet of snow. I cannot think of a better thing to do than to cook a pot of SuperSoup to stave off my anxiety… and keep me warm when the power fails.

Leek Soup


1/2 cup oil (olive)
3 leeks (bulb & green; sliced thin in the round)
3 large red potatoes (skin on; cut in half & sliced thin)
3 plum tomatoes (chopped)
8 cups water
1 cup sour cream

For more abundance: ADD slices of smoked sausage (sliced round)


4 tbs chicken boullion
1 tsp rosemary
1 tsp tarragon
1 tsp parsley


SAUTE leeks in oil (until tender, about 10 minutes)
ADD potatoes, tomatoes & seasoning
ADD water
ADD sour cream
COOK until potatoes are soft (about 20 minutes)
SERVE with cornbread or other “good bread” (like buttered ciabatta)
